Molten Midnight Brownies

There are two kinds of brownies.

The kind you eat because they happen to be there (because who is actually turning down a brownie?) and the kind that makes you stop mid-bite and go, wait this is incredible! 

These are the second kind.

This isn’t the dry, overly sweet, leaves-you-feeling-weird version.

This is deep, dark, rich chocolate that melts into itself just enough to feel indulgent… without turning into that heavy, regret-it-after feeling.




These are the kind you make once… and then quietly start making again every week or at least once a month. 



Let’s talk about cacao for a second

This is where everything goes from, "oh this is good" to "ohhhhh this is GOOD

Most brownies are made with cocoa powder that’s been processed down to the point where it’s basically just “chocolate flavor.” It does the job, but it’s flat and blah. 


Cacao powder is different in the best way! 

It’s deeper, slightly bitter in a good way, and more complex (plus it is a great source of magnesium- you can read more about cacao here)

It gives you that real chocolate flavor that actually lingers instead of just hitting you with sweetness and disappearing.

Since you’re not relying on that overload of sugar to carry the flavor… the whole thing feels more balanced and we can use less sugar without the flavor being jeopardized. 


These brownies are truly richer without being overwhelming, they are chocolatey without being fake, and they are so delicious I can't even wait for you to try them! 


What makes these brownies hit different

It’s the texture.

Right out of the oven, the center is soft, slightly molten, and just set enough to hold together. The edges have that light structure, but the middle… that’s where the magic is.


You know that molten lava cake? This is basically like that things big sister but so much better 


This is one of those desserts that feels like a full experience all on its own.

You’re not left feeling like you need to unbutton your pants and take a nap after one piece!

This isn’t about making “healthy brownies” that taste like disappointment.

This is about making something that actually tastes good…

while also not sending your body into that weird spiral afterward or making your brain feel like it checked out for the day.

Molten Midnight Brownies

What you need

2/3 cup melted butter

1 cup coconut sugar

4 eggs

1 teaspoon vanilla extract

2/3 cup cacao powder

1/2 cup flour

1/2 teaspoon sea salt

1/2 teaspoon baking soda

1/2 to 3/4 cup chopped walnuts


All you do is

Preheat your oven to 350.

In a bowl, mix the melted butter and coconut sugar until it looks smooth and glossy. Add the eggs and vanilla, and mix until everything is fully combined and slightly thickened.

Add the cacao powder, flour, sea salt, and baking soda. Stir just until everything comes together into a rich, thick batter. Fold in the walnuts.

Pour into a lined or greased pan and spread it out evenly.

Bake for about 18–22 minutes, depending on your oven. You want the edges set and the center just slightly soft. That’s what gives you that molten texture.

Let them cool just enough to slice… or don’t. They’re very good warm.
