Spaghetti- The way you like it!

Okay, that could be a little cocky of me to assume this spaghetti is the way you like it. What it is though, is customizable, is that a word? You can easily make it with ground deer, turkey, chicken, beef, or meat free by using lentils. You can also make it dairy free and oil free if you would like.

Let's get to it!
Ingredients:
salt and freshly ground black pepper, to taste
1 TBS really good quality extra virgin olive oil or butter or for oil free you can use a little water
1 cup of uncooked lentils - I like using the red but any color will work (You can use 1 pound of prepared ground deer, chicken, beef, or whatever ground meat you prefer. Cook meat thoroughly, strain off the grease, then follow the recipe using ground meat instead of lentils. You could do a combo of half meat and half lentils if you choose.
1 medium onion, chopped
4-5 garlic cloves
16 oz of sliced mushrooms (optional)
15 ounces tomato sauce
6 ounces tomato paste
2 teaspoons Italian seasoning
3 teaspoons garlic powder
3 TBS nutritional yeast
1 1/2 cups of water (or more as needed)
1 large handful of fresh herbs (parsley, cilantro, or basil) chopped
1 package spaghetti noodles
Heat a medium/large saucepan over medium heat. Drizzle in about a tablespoon of extra Virgin olive oil (or one of the alternatives)
Add in the chopped onion and garlic, cook for 3-5 minutes or until soft. Add in the remaining ingredients; save the fresh herbs and noodles for last.
Stir well, turn the heat down to low, taste to adjust the seasoning if needed.
As it cooks the lentils will absorb some of the water. If you want it more saucy add in more water in small increments.
Once the lentils are soft, about 12-15 minutes turn off the heat, add in the chopped herbs and serve over the cooked noodles.
