Pasta, it is one of our weaknesses and we love to really go all out and splurge when we do indulge. This recipe is simple, elegant, and comes together rather quickly. It is creamy, has a hint of wine to give it that special flavor, and is perfect for date night at home.
As with most of the recipes on this website this one is very customizable. There are so many different variations you can do with this winey creamy pasta so grab your favorite bottle of white wine, put on a little music, and get to cooking. We did this version with scallops. You can do whatever roasted veggies, seafood, or even grilled chicken if you choose. The options are endless and I encourage you to get creative and see what you come up with!
It is date night pasta, think elegant and top notch ingredients to really make this dish feel special and taste incredible!
Recipe
This recipe comes together pretty quickly.
It takes me about 30 minutes from walking in the kitchen to fixing plates.
As always we use organic, whole foods based, clean ingredients as much as possible.
Your ingredients are going to make a huge difference in the quality and taste of your meal.
Ingredients
1 Package of your favorite pasta cooked
(linguini or angel hair does really well in this dish)
1 container of baby tomatoes
Drizzle of extra virgin olive oil or 2 TBS of organic grass fed butter
1 1/2 cups white wine of your choice.
(A dry white wine does best for this recipe.)
2 cups of your favorite red pasta sauce store bought or homemade
1/2 cup nutritional yeast
1 tsp garlic powder
1/4 tsp seal salt or to taste
2 bay leaves
Fresh ground black pepper to taste
Get Creative
Roasted veggies of your choice, grilled chicken, or pan seared/baked sea food
-This is where you can get creative and come up with your favorite!
In the photos for this posting we did spinach with roasted scallops, mushrooms, and baby tomatoes.
Then topped the finished dish with fresh squeezed lemon and some blue cheese crumbles.
You can also add in fresh basil and thyme to garnish.
Directions
Prepare your pasta and preheat the oven to 425°F if you are roasting or baking veggies or a meat.
I like to get the oven ingredients almost finished before I start the sauce and while the oven ingredients are going I cook the pasta, strain it, then toss with butter and set aside while I prepare the sauce.
This ensures all aspects of the meal comes together at the same time.
I like using a cast iron skillet- any large skillet will do though. Heat your pan over medium heat.
Pour in your pasta sauce, wine, seasonings, and stir well.
Bring to a low simmer then turn the heat down. Stir occasionally
Taste to adjust seasonings if needed
Let simmer on low for about 15 minutes.
Add in your cooked pasta, toss to make sure everything is coated
If you are using spinach or a green that does best wilted toss it in now and combine (You can do swiss chard, dandelion greens, or any other green you desire)
Once your greens are wilted, remove from heat
Now you are ready to put the dish together. Plate the pasta, add your roasted veggies or meat of your choice, and whatever toppings you would like to garnish with.
